Chef Paul Virant

Paul Virant is the executive chef/owner of Vie, his flagship restaurant in Western Springs, Illinois; Vistro, a neighborhood bistro in nearby Hinsdale; and Gaijin, the first dedicated okonomiyaki restaurant in Chicago. The Preservation Kitchen, Virant's canning manual and cookbook, combines the technical aspects of canning with a chef's expertise on flavor.
